Recipe -Banana butter cake

It's first day of school holiday yesterday.I have lots of very ripe Ang Bak Banaa ,so we made some banana cake and ate it while it's still warm after dinner.

(A) 250g butter (I used 125g butter, + 125g margarine)

230g sugar

(B) 5 eggs (55g each)

(C) 300g plain flour

1/2 tbsp milk powder

1 tsp baking powder

(D) 200g banana (used Ang Bak/hong2 rou4 Banana)

pinch of salt

1/4 tsp banana essence( optional)

Grease & line loaf pan with paper (if using loaf pan)

(1) Cream (A) till light & fluffy

(2) Add (B), one at a time & cream till light & smooth

(3) Fold in the sieved (C) & mix well

(4) Mash the banana & mix with the rest of (D) ingredients till smooth. Add into the above mixture & mix till well incorporated.

(5) Bake at 180C for 50- 60 min. at lower rack of oven

For BIG cup cakes, I bake at 200c for about 45 min,on the middle rack.
